The supervisory authorities control the quality of the ham every year.

Our Iberian pigs go through an initial stage of development in the pasture, fed on grasses, shoots, bulbs and grain. Later when the pigs are in the open range of the pasture they are fed with fruits of the oak trees. This fruit is rich in carbohydrates and fats, especially oleic acid, and leads to the healthy character of the products of Iberian pigs.

Race, diet, continuous exercise and slowly curing are the factors leading to the outstanding quality of hams and shoulders that are brilliant, perfect marbled, fragrant and delicious.
