As for the energy contribution, 100g of Iberian ham contribute less than 250 kcal, more or less like bread, so moderate consumption will not do harm to low calorie diets. The 100g of Iberian ham contains approximately 57, 5 g of water, 28, 5g protein, 14, 5 g fat, 0g of carbohydrate and 0g of roughage.





The fat of Iberian ham contains over 55% oleic acid, monounsaturated fatty acid. It has a beneficial effect on blood cholesterol.

Rigorous scientific studies have shown that oleic acid products have a beneficial effect on cholesterol in the blood by increasing the rate of good cholesterol (HDL) and reducing the rate of harmful cholesterol (LDL). Only virgin olive oil has a higher oleic acid content. The total proportion of unsaturated fatty acid in the cured products of the Iberian pig fed with acorns is greater than 75%, which makes it the most “cardiosaludable” known animal fat, and even more healthy than some of vegetable origin. This merit does not only come from the breed of the pigs, but is also greatly influenced by the feeding with acorns and grass. In addition to this beneficial effect on cholesterol, Iberian ham provides proteins, vitamins B1, B6, B12 and folic acid, which are beneficial for the nervous system and brain function. It is also rich in vitamin E, a powerful antioxidant, and in minerals like cooper, essential for bone and cartilage, iron, zinc, magnesium, phosphorus and selenium, the later linked to anti-aging processes.
